7 Reasons to Keep Cooking Healthy and Delicious Daily Meals at Home

Are you still cooking meals at home? How many meals do you think you have made in your life? I have easily made more than 12,000 meals for my family, friends, guests, and to take to potluck suppers.

That’s a lot of cooking, and it only includes evening meals. Many times, I make breakfast, lunch, and supper. I enjoy cooking (and eating), so I don’t mind making a meal, especially if someone will be joining me to eat the food.

I must admit that if I’m eating alone, I prepare a simpler meal than if I’m making food for others. One reason for this choice is, it’s harder to make an interesting meal with only one serving than it is to cook a larger quantity for a family.

Of course, you could always go with a grilled pork chop, baked potato, and steamed vegetable, but that meal gets old, doesn’t it?

Do you often think, “Why don’t I just order take-out food when I’m eating alone?” Or do you, like I sometimes do, simply eat oatmeal or a fried egg?

There are many reasons that I choose to cook at home, rather than eating at a restaurant or calling in a take-out order. One reason is that I like to cook, but that’s not the only reason.

I am a recipe blogger at Recipe Idea Shop, where I focus on tasty family recipes with a healthy twist. Each recipe includes a nutrition label and simple instructions. However, most recipes serve four or more.

A few people have asked me to add a special focus on cooking for one or two, and I have done that.

Here are seven reasons I choose to make daily meals at home.

A Friendly Budget

Making meals at home is less expensive than eating in most restaurants. Nutritious, home-cooked meals can cost as little as a dollar. For instance, in season, you can purchase a green pepper, onion, tomato and a small spaghetti squash for around $4.

Combining these ingredients with spices you have on hand will make a delicious, healthful meal. Moreover, you will have enough leftovers for at least three more meals, which can be frozen in one-serving size containers for future lunches or suppers.

A bag of lentils, a small onion, and a can of diced tomatoes along with a few spices makes a wonderful lentil soup. Add a diced apple to the soup and you have an entirely different flavor. Lentil soup costs less than a dollar a serving and freezes well.

Watching the Waist

When you eat at a restaurant, it’s hard to know how many calories, how much fat and how much sugar, etc., you are eating. Typical U.S. restaurants use plenty of oil, thickeners such as flour, and high-fat, high-salt, high-sugar foods in their menu items.

There are seldom nutrition labels available, and the typical serving size is at least double what one individual should eat. Recently, I asked for a nutrition chart for a smoothie I was considering and found that the one that interested me contained over 600 calories!

Better Quality Food

When you cook at home, you can control the quality of the ingredients and the amount of salt, sugar and fat you include in a recipe. I choose to cook with the best fresh, whole ingredients I can afford.

I also try to avoid fruits and vegetables treated with pesticides and animal products filled with antibiotics. Also, when you start fresh and organic, you avoid all those food additives with names you can’t pronounce.

Improved Nutrition

Many restaurants, especially the ones that offer low-cost meals, use a lot of processed foods, salt, sugar and fat to make their recipes taste good. I have found that the more processed foods and sugar I eat, the more I crave them. Do you find you crave foods that are bad for you, too?

Better Health

Eating high-fat, high-salt, high-sugar meals can spike your blood sugar, increase your blood pressure and negatively affect your health.

My health dramatically improved when I started reading nutrition labels, avoiding processed foods and concentrating on whole foods. I was surprised to find that I no longer crave snacks and sweets, and that I feel more satisfied after I eat.

Taps Creativity

Watermelon Olive Mint SaladOne of the things I like about making meals at home is trying new recipes and making them look pretty. I love to eat a variety of colors, textures and flavors in my meals. Trying new combinations of spices is delightful and makes me feel creative.

One of my favorite new recipes is Watermelon Olive Mint Salad. I think the addition of Kalamata olives to a Middle Eastern Watermelon Mint Salad with Feta is inspiring.

Social Interaction

Eating is a social activity to me. I love to make food, eat food, share food and talk about food. If no one is available to eat with me, I read cookbooks or research new recipes on the Internet. I savor the meals I eat, whether I am the cook or someone else. What do you do when you eat alone?

How Can You Tell If It’s Grief and What Can You Do About It?

When someone we love leaves us or dies, the neural networks in our brain that are wired for connection short out. This is a completely natural but frightening experience.

When you lose someone, you grieve the loss of the connection you had with them. You may think you’re going crazy when you’re probably just grieving.

After my husband died, I couldn’t keep track of things very well, and my emotions were all over the map. I didn’t like it, but I had to go through it.

Signs You’re Grieving

If you’ve lost someone, recently or long ago, what did you experience in the days/weeks after it happened?

Did you forget to put the wet clothes in the dryer for three days? I did. It’s normal. Did you sleep for hours without wanting to get up? Yeah, I did that, too, and it’s okay.

Did your coffee cup feel like it weighs 20 pounds? Have you felt really angry or been deeply sad? Uh huh, that’s grief, too. You may even feel guilty or afraid or find yourself laughing when you think you should be crying. Yes. Welcome to grieving.

Grief has its own schedule and time frame. You feel fine one minute and crushed under a load of gravel the next. You may feel happy or relieved, and that’s okay, too.

When Will It Get Better?

You want to feel better fast, I understand, but grief doesn’t work that way. It doesn’t move from “A” to “B.” Grief goes from “Z” to “F” to “D” and then flips over to “S.”

I’ll bet you want to “get back to normal.” But, you can’t seem to do that. Why? Because your “normal” changed when your loved one left your life, and you need time to adjust to a “new normal” of life without them.

The neural network in your brain, the one that’s wired for connection, is shorting-out because your loved one is gone, and there’s no connection at the end of the circuit. This short-circuiting is what makes you feel like you’re going crazy.

But no matter what you’re feeling, you’re probably not going crazy. You’re probably just grieving*.

How to Heal

To heal from your grief, it’s important to embrace your feelings. It’s tempting to say, “I’m okay,” but be honest. Have you been scared, sad, mad, or frustrated? These are normal emotions to have when you’re grieving.

Acknowledge your heartache with this little exercise: Make a list of a few emotions you’re feeling. Then say OUT LOUD: “It’s okay for me to feel (scared, sad, mad, frustrated). It’s normal, I’m just grieving. I’m okay.” Repeat this process with every word on your list.

And then something fascinating will happen. You’ll relax.

The good thing is, you can do this exercise as often as you need. It doesn’t take long, but it does help lift the load.

While I think Dorit Kemsley is gorgeous as is, she recently hit up a cosmetic dentist to get veneers. And while watching Housewives 24/7 for the past ten years somehow hasn’t landed me in the plastic surgeons chair, I doooo sometimes dream of veneers as I love a set of nice white teeth. And though I didn’t think Beverly Hills blondie Dorit needed them, the finished product does look great.

I will say, the thing that has probably kept me from getting any work done is what also draws me to it—Reality TV. The first time I saw an implant removed on a reality show (Dr. 90210 perhaps?) I almost fainted. And since I freak out over a basic teeth cleaning I’m probably not a candidate for veneers without some serious drugs. So for now the only way you’ll probably catch me beginning to resemble Dorit is when I’m wearing a new Blondie tee shirt.

The Trail, The Flood, and My Quest for a New Route

My family has enjoyed a cabin in a small hamlet outside of Estes Park for over 40 years. Summers of my youth were spent fishing, hiking, and exploring amidst the granite rocks, pristine lakes, and whispering pines of my beloved Colorado.

The Familiar Trail

We often hiked “around the mountain.” Starting where a small creek fed the community, the trail climbed up and behind the mountain to the west. We would traverse the trail to an old homestead road which then connected up to another small creek along a fire road at the other end of the meadows.

On September 13, 2013, a flood of Biblical proportions completely changed the landscape of our community and the surrounding areas. The innocuous flow of water that felt so good to soak your feet in turned into torrents that stripped trees from their moorings and exposed bedrock 15 feet below.

Our cabin and many others were spared; many were not so lucky. The past seven years have been spent reconstructing the dams that created our fishing enclave and the roads that provided access to the serenity of this place.

Building Courage for a Memorable Hike

I have tried to find a way “around the mountain” again but have always been thwarted by time constraints, felled trees, deep ravines, or lack of spirit. Over time, a new trail has emerged along both of the small streams and chainsaws have cut away dead trees to open more and more of the path at both ends of the route.

Recently, I decided to find my way “around the mountain” again. Arousing my adventurous spirit, the day unfolded with unbridled time.

I had my phone’s map app and could see I was headed in the right direction on the old trail when it petered out in a small meadow. I decided to head up the mountain and skirt around the flood debris along the creek bed.

Around the Mountain Again!

The Rocky Mountains are aptly named. I encountered some granite walls that looked negotiable. I asked myself – which is the best route for a 58-year-old, athletic woman to take? Not the same one I would have readily scaled 25 years ago, that is for sure!

Cautiously, I put one foot in front of the other. I got to the top, assumed the power pose, and let out a big “I did it” at the top of my lungs.

Looking at my app, I saw a road started a short distance away. Hiking around a hunting camp, I connected up to a well-traveled jeep road. I felt at ease.

This road lead in the direction I knew I wanted to go. It had a faint air of familiarity and I hoped that I would cross paths with the creek trail from the other side of my starting point.

Ahead on the road, I saw a nicely appointed Airstream trailer, the door open with chairs outside and newer Dodge Ram truck off in a meadow and I took pause. The thought crossed my mind “what is a middle-aged lady doing out here by herself?” I passed by gingerly, not wanting to surprise anyone.

Continuing around the corner – I encountered a wood pallet with a sign “road ends.” As I walked past the sign, I saw reasoning for the signage. The carnage from the flood left ruts 3 feet deep that will be quite the challenge for a road grader someday.

I followed the remnants of the road and kept my eyes peeled for the trail that I hoped lay ahead. I was rewarded. Recognizing familiar terrain, I followed the trail back down to the far end of the meadow. I had made it “around the mountain.”

The Financial Takeaway

As always, I have comparisons to your financial journey. Has Covid, the economy, your work environment, or other life circumstance blown out your “plan” in retirement?

It certainly can happen to anyone, but there is good news: you can re-route and navigate a new way through it! I had a map – my destination remained intact.

I just had to do it differently from what had been done in the past. I had to take some risk, emotionally and physically, and was rewarded for doing so. I had to explore and push through the fear. I pressed on – one foot in front of the other.
